Method
Preheat oven to 350°F. Grease and line two 9-inch cake pans.
Whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk eggs, milk, oil, and vanilla.
Combine wet and dry ingredients.
Slowly stir in hot coffee until smooth.
Divide batter between pans.
Bake 30–35 minutes until a toothpick comes out with moist crumbs.
Cool in pans for 10 minutes, then transfer to wire racks.
Beat frosting ingredients until smooth and fluffy.
Frost cooled cake and serve.
Notes
Do not overbake. Cake layers can be frozen for up to 3 months. Hot coffee enhances the chocolate flavor but can be replaced with hot water. Freshly baked layers are easiest to frost after cooling completely.
