Method
In a large bowl, beat butter and granulated sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
Divide the dough into three equal portions. Leave one plain, color one red, and color one blue.
Cover and refrigerate for at least 1 hour.
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Take small portions of each color, gently combine into balls, and roll generously in powdered sugar.
Place on prepared baking sheets about 2 inches apart.
Bake for 9–11 minutes or until crinkled and lightly set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For the most vibrant colors, use concentrated gel food coloring. Keep the dough chilled while working. Store cookies in an airtight container for up to 5 days.
