Ingredients

For the Bars:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or cream
  • Red food coloring gel
  • Blue food coloring gel
For the Topping:
  • 1/2 cup Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1/2 cup white chocolate chips melted
  • 1/2 cup fresh strawberries sliced
  • 1/2 cup fresh blueberries
  • 2 tablespoons patriotic sprinkles

Method

Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
Cream butter and sugar until light and fluffy.
Add egg, vanilla, and milk, then mix until combined.
Stir in flour until a soft batter forms.
Divide batter into three portions. Tint one red, one blue, and leave one plain.
Spoon colored batters into the pan and gently swirl together.
Bake for 22-25 minutes or until lightly golden.
                Cool completely before decorating.
Mix Greek yogurt and honey together and spread lightly over cooled bars.
Drizzle with melted white chocolate and top with berries and sprinkles.
Slice into 16 bars and serve.

                        Notes

For cleaner slices, chill bars for 30 minutes before cutting. Store refrigerated for up to 3 days. Fresh berries can be added just before serving for the best appearance.
