Heat the olive oil in a large Dutch oven or deep skillet over medium heat. Add the diced onion and cook for 4–5 minutes until softened.
Stir in the garlic and grated ginger. Cook for 1 minute until fragrant.
Add the curry powder, cumin, smoked paprika, turmeric, salt, and black pepper. Stir continuously for about 30 seconds to toast the spices.
Add the sweet potatoes, chickpeas, coconut milk, and vegetable broth. Stir well to combine.
Bring the mixture to a gentle simmer. Reduce the heat to medium-low, partially cover, and cook for 18–22 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
Stir in the baby spinach and cook for 2–3 minutes until wilted.
Remove from the heat and stir in the fresh lime juice. Taste and adjust the seasoning if needed.
Serve over steamed rice or with warm naan, garnished with fresh cilantro and lime wedges.
Notes
Cut the sweet potatoes into evenly sized cubes so they cook at the same rate.
Full-fat coconut milk creates the richest, creamiest sauce, but light coconut milk can be used for a lighter version.
