4th of July Creamy BLT Pasta Salad
The first time I brought this BLT pasta salad to a Fourth of July cookout, I honestly thought it would be overshadowed by the burgers and grilled chicken. Instead, people kept coming back for seconds and asking who made the pasta salad. By the end of the evening, the bowl was completely empty, and I’ve been making it every summer since.
It’s everything people love about a classic BLT sandwich packed into a creamy, crowd-friendly pasta salad that’s perfect for warm-weather gatherings.
Why This Recipe Works
Here’s the thing: a lot of pasta salads either end up dry after sitting outside or overloaded with dressing. What I figured out is that combining mayonnaise with a little sour cream creates a dressing that’s creamy without feeling heavy. The crispy bacon, juicy tomatoes, and crunchy romaine bring the classic BLT flavors, while rotini pasta holds onto every bit of dressing.
Ingredient Notes
I always use thick-cut bacon because it stays crisp longer after mixing into the salad.
Cherry tomatoes work best since they’re naturally sweet and don’t release as much liquid as larger tomatoes.
For the romaine lettuce, add it right before serving if possible. That keeps it crisp and fresh.
Apple cider vinegar gives the dressing a little brightness that balances the richness of the mayonnaise and bacon.
How to Make It
Start by cooking the rotini according to the package directions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely before adding the dressing.
While the pasta cooks, prepare the bacon. Cook it until crisp, then transfer it to a paper towel-lined plate. Once cooled, chop it into bite-sized pieces.
In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper. The dressing should be smooth and creamy.
Add the cooled pasta to the bowl and toss until every piece is coated. Stir in the tomatoes, most of the bacon, and the chives.
Right before serving, gently fold in the chopped romaine lettuce and sprinkle the remaining bacon on top. The contrast between the creamy pasta and crisp lettuce is what makes this salad stand out.
Things I Learned the Hard Way
The first time I made this, I mixed in the lettuce several hours before serving. By dinner, it had lost most of its crunch.
Don’t skip rinsing the pasta with cold water. Warm pasta absorbs too much dressing and can become heavy.
People always ask if it can be made ahead. Absolutely. Just keep the lettuce separate and add it right before serving.
If the salad seems a little dry after refrigeration, stir in a spoonful of mayonnaise before serving.
Storage & Serving Suggestions
Store leftovers in an airtight container in the refrigerator for up to 3 days. If possible, keep the lettuce separate until serving.
This salad pairs perfectly with grilled burgers, barbecue chicken, hot dogs, fresh fruit, and iced tea during summer gatherings.
