4th of July Creamy BLT Pasta Salad

A creamy and flavorful BLT pasta salad loaded with crispy bacon, juicy tomatoes, fresh romaine, and a tangy homemade dressing—perfect for summer parties and cookouts.

Ingredients
  

  • 12 oz rotini pasta
  • 8 strips thick-cut bacon cooked and chopped
  • 2 cups cherry tomatoes halved
  • 3 cups romaine lettuce chopped
  • 2 tbsp fresh chives chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Method
 

Cook rotini according to package directions until al dente. Drain, rinse with cold water, and cool completely.
    Cook bacon until crispy, then drain and chop into bite-sized pieces.
      In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
        Add cooled pasta and toss until evenly coated with dressing.
          Stir in cherry tomatoes, chives, and most of the bacon.
            Fold in romaine lettuce just before serving.
              Garnish with remaining bacon and additional chives if desired.
                Serve immediately or chill until ready to serve.

                  Notes

                  For the best texture, add the lettuce right before serving. The salad can be prepared up to one day ahead, but keep the lettuce separate until serving time. If refrigerated overnight, stir in a tablespoon of mayonnaise before serving if needed.
