The Black Bean and Corn Salad I Keep in My Fridge All Summer
A few summers ago, I needed a quick side dish for a last-minute backyard cookout. I checked my pantry, found a can of black beans and a can of corn, then started tossing ingredients together. What was supposed to be a simple side ended up being the first bowl emptied at the table.
Now I make this Black Bean and Corn Salad almost every week during warm weather. It’s fresh, colorful, filling, and doesn’t require turning on the oven.
Why This Recipe Works
Here’s the thing: a lot of salads either feel too light or too heavy. This one lands right in the middle. The black beans add protein and fiber, the corn brings sweetness, avocado adds creaminess, and the lime dressing ties everything together. What I figured out after making it dozens of times is that the fresh cilantro and jalapeño make all the difference.
Ingredient Notes
I use canned black beans and canned corn because they’re convenient and always in my pantry. Just make sure to rinse the beans well.
For the avocado, choose one that’s ripe but still firm. Overripe avocado can get mushy once mixed.
If you’re sensitive to heat, remove all the jalapeño seeds or use only half of the pepper.
How to Make It
I start by draining and rinsing the black beans and corn. After that, I dice the tomato, avocado, red onion, and jalapeño into small pieces so every bite has a good mix of flavors.
In a large bowl, I combine the beans, corn, vegetables, and chopped cilantro. The colors alone make it look like summer in a bowl.
For the dressing, I whisk together lime juice, oil, garlic, cumin, salt, and black pepper. Once everything is combined, I pour the dressing over the salad and gently toss it together.
The avocado should be added last and mixed carefully. I learned this after turning a beautiful salad into avocado mash more than once.
I usually let the salad sit for about 15 minutes before serving so the flavors can blend together.
Things I Learned the Hard Way
Don’t skip rinsing the beans. The liquid from the can can make the salad taste muddy and affect the texture.
I’ve also learned not to add the avocado too far in advance if I’m making this for a party. It stays fresher and looks better when added shortly before serving.
People always ask if they can make it ahead. Yes, but I recommend preparing everything except the avocado and mixing that in right before serving.
Storage & Serving Suggestions
Store leftovers in an airtight container in the refrigerator for up to 2 days. This salad is great with grilled chicken, tacos, burgers, or as a light lunch on its own. A fresh squeeze of lime before serving brings everything back to life.
