Watermelon Fruit Salad with Lime Mint Dressing
The first time I made this watermelon fruit salad was during a heat wave when turning on the oven felt like a terrible idea. I had half a watermelon sitting in the fridge, a few berries that needed to be used, and some fresh mint growing a little too enthusiastically in my backyard planter.
I threw everything together, added a quick lime dressing, and honestly expected it to be just another fruit salad. Instead, it disappeared before dinner even started. Now it’s one of the recipes I make every summer when I need something refreshing and easy.
Why This Recipe Works
Here’s the thing: most fruit salads don’t need much help, but a simple lime mint dressing makes a huge difference. The lime brightens the sweetness of the watermelon and berries, while the mint adds a fresh flavor that makes the whole bowl taste lighter. What I figured out after making this several times is that letting it sit for about 10 minutes before serving helps all the flavors come together.
Ingredient Notes
I like using seedless watermelon because it’s quicker to prepare.
Fresh lime juice is worth squeezing yourself here. Bottled lime juice works in a pinch, but the flavor isn’t quite as bright.
If your cherries are especially sweet, you can reduce the agave syrup slightly.
How to Make It
Start by cutting the watermelon into bite-sized cubes and placing them in a large serving bowl. Add the halved cherries, raspberries, and sliced strawberries.
In a small bowl, whisk together the fresh lime juice, lime zest, agave syrup, and chopped mint. The dressing should smell fresh and citrusy.
Pour the dressing over the fruit and gently toss everything together. Be careful with the raspberries since they can break apart if mixed too aggressively.
Let the salad rest for about 10 minutes before serving. The fruit will release a little juice, creating an even more flavorful dressing at the bottom of the bowl.
Things I Learned the Hard Way
Don’t prepare this too far in advance. I once made it the night before a gathering, and by the next day the berries had softened more than I wanted.
Keep the watermelon pieces fairly large. Smaller cubes release more water and can make the salad seem watery faster.
If you’re transporting it to a picnic, keep the dressing separate and mix everything together shortly before serving.
Storage & Serving Suggestions
Store leftovers in an airtight container in the refrigerator for up to 2 days. This salad is best served cold and pairs well with grilled chicken, sandwiches, or summer barbecue meals.
