Bulgur Salad with Carrots, Mint, and Raisins
I started making this bulgur salad a few summers ago when I needed something that could sit on the table during family lunches without losing its texture. Most salads wilt quickly, but this one actually seems to taste better after a little time in the refrigerator.
What surprised me most was how much flavor comes from such simple ingredients. The sweetness of the raisins, the freshness of the mint, and the slight crunch of the carrots make every bite interesting without requiring much effort.
Why This Recipe Works
Here’s the thing: bulgur is one of the easiest grains to work with. It cooks quickly, absorbs flavors well, and stays pleasantly chewy. What I figured out after making this recipe repeatedly is that the combination of sweet raisins and fresh mint creates a balance that keeps the salad from tasting boring. It’s light enough for warm weather but filling enough to serve as a lunch.
Ingredient Notes
I prefer medium-grind bulgur because it gives the salad a little more texture, but fine bulgur works too.
Fresh mint makes a huge difference here. Dried mint won’t provide the same bright flavor.
Golden raisins can be used instead of regular raisins if you prefer a slightly milder sweetness.
How to Make It
Start by cooking the bulgur according to the package directions. Once it’s tender, spread it on a plate or baking sheet to cool more quickly. Warm bulgur can make the herbs wilt, so I try not to rush this step.
While the bulgur cools, peel and grate the carrots. Chop the fresh mint and place both in a large mixing bowl. Add the raisins and gently toss everything together.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. The dressing is simple, but it brings all the ingredients together.
Add the cooled bulgur to the bowl and pour the dressing over the top. Toss until everything is evenly coated. Let the salad sit for about 15 minutes before serving so the flavors have time to blend.
Things I Learned the Hard Way
One mistake I made early on was adding the dressing to hot bulgur. The mint lost some of its freshness and the salad wasn’t nearly as vibrant.
Don’t skip the resting time. Even 10–15 minutes helps the raisins soften slightly and allows the flavors to develop.
If the salad seems dry after refrigeration, a small squeeze of lemon juice brings it right back to life.
Storage & Serving Suggestions
Store the salad in an airtight container in the refrigerator for up to 4 days. It’s excellent alongside grilled chicken, fish, roasted vegetables, or packed for lunch the next day.
