How to Make It

Method
 

Line a baking sheet or tray with parchment paper.
    Place 12 cookies flat-side up on the prepared tray.
      Scoop ice cream evenly onto each cookie.
        Top with remaining cookies and gently press to form sandwiches.
          Smooth the exposed ice cream edges with a small spatula.
            Roll the edges in sprinkles and candies until coated.
              Freeze for at least 4 hours or until firm.
                Serve directly from the freezer.

                  Wrap individually for easy serving and storage. You can substitute sugar cookies or brownie cookies for a different flavor. Assemble quickly to prevent the ice cream from melting.
